Hia guys, hope you’re all well. I’ve been busy celebrating Halloween and bonfire night this week by dressing up as a witch (twice) for two separate occasions and going to watch some amazing fireworks at Penarth and also buying some sparklers to try out in the garden. It’s also Reading Week this week so after all the fun and celebrations I do need to crack on with some work. The up side to this is that I’ve found a placement to go to next January for my placement module; ITV Wales! Very chuffed with this, after I have been nagging them constantly for weeks! So now I can get cracking with the essay that I’ve been given with regards to that module. So s’all good!
While I was busy out celebrating though, I couldn’t help feel that there has become a sudden chill in the air; winter is definitely on it’s way. So my housemates and I thought it’d be a good idea to cook some soup. We decided on Butternut Squash and Sweet Potato (see picture); not your usual tomato soup I know but we were feeling adventurous.
It may not look very nice in the picture as my cooking never looks very appetizing but the proof is all in the tasting as I always say, so bear with me! It’s so easy to do as well! First of all you:
- · Chop 2 sweet potatoes and 1 butternut squash into small pieces
- · Then pop a chicken stock and some salt and pepper into a saucepan and boil the vegetables on a medium heat for around 20mins
- · Blend the veg with a hand blender or if not you can mash them until it’s a nice smooth consistency
- · Serve in a bowl and if you want to go all out, put some ciabatta bread with cheese in the oven for 10 mins on a medium heat
A yummy wintery soup to warm you up in those cold halls if you’re living in them now or will be this time next year! It worked for me! And all for just £4 and served 5 people! Bargain! If you’re just cooking it for yourself just freeze the rest of the soup and have it at your disposal when you need a quick healthy meal.
